Dank des mediterranen Klimas ist der Spargel in Südtirol ein früher Genussbote und kann hier, auf der Südseite der Alpen bereits Ende März erntefrisch serviert werden. Dazu wird ein fruchtiger Sauvignon gereicht. Wein und Spargel schmecken und erleben kann man auf kulinarischen Spargelwanderungen, bei Spargel- und Gourmetwochen sowie auf dem neuen Themenweg „Terlaner Weinweg“ im frühlingshaften, blütenreichen Etschtal.
Terlaner Boden ist sandig-weich und verleiht dem Margarete-Spargel seine besondere Geschmacks-Note. In derselben, mineralhaltigen Erde wächst die Sauvignon-Traube für den so genannten „Spargel-Wein“, der geschmacklich hervorragend mit dem weißen Königsgemüse korrespondiert. Die Kellerei, die diesen Wein hervorbringt, ist die Kellerei Terlan, die 1893 gegründet wurde. Heute gehören ihr mehr als einhundert Weinbauern an, die die Trauben mit viel Erfahrung, Gefühl und der nötigen Kontrolle vinifizieren. Weinexperten sind begeistert von der präzisen Frucht und dem außergewöhnlichen Charakter der Weine. Die Tradition des Weinanbaus in Terlan geht sogar auf über zweitausend Jahre zurück.
Die Qualität des Margarete-Spargels ist erster Güte, was sicherlich auch an der limitierten Erntequantität der Spargelbauern liegt. Auf eine Anbaufläche von zirka zehn Hektar kommen jährlich 54.000 Kilogramm Margarete-Spargel. Seit 1997 haben sich die Terlaner Spargelbauern mit der Kellerei Terlan zusammengeschlossen, um die exklusive Vermarktung ihres Spargels zu sichern. Aber nicht nur Kellereien, Wein- und Spargelwirtschaft arbeiten in Terlan Hand in Hand: Auch die neun Gastbetriebe der Region gliedern sich in dieses ideale Kooperationsgefüge ein und sind beliebte Hauptabnehmer des Margarete-Spargels.
In der Zeit von Ende März bis Ende Mai (mit offizieller Eröffnung am 8. April), den so genannten „Spargelwochen“, bieten sie auf ihren Spezialitätenkarten frische Spargelgerichte an und servieren dazu den passenden Terlaner Spargelwein.
Wer die Früchte des Frühlings nicht nur essen sondern sie auch in voller Pracht in der Natur genießen möchte, kann zu Fuß oder mit dem Fahrrad durch die Weinberge und Obstgärten fahren. Im April und Mai bietet das Tourismusbüro Terlan die „kulinarischen Spargel-Radwanderungen“ an. Dabei wird mit dem Fahrrad die Gegend erkundet. Auf dem Programm stehen die alten Fresken der Terlaner Pfarrkirche und allerlei Spargelgenüsse. Außerdem werden auf der Tour Spargelbauern besucht, die alles rund um den Anbau und das Stechen erklären. Zum Abschluss geht es in die berühmte Kellerei Terlan, wo gezeigt wird, wie der Spargel verkaufsfertig gemacht wird.
